Ingredients :
3 Egg Plants
1 Egg
Salt as per Taste
1/4 Tsp Black Pepper
1/4 Tsp crushed Red Chili
1/4 Cup All purpose Flour
1 Tsp Ginger Garlic Paste
2 Tbsp White Vinegar
2 Tbsp Soya Sauce
2 Tbsp Chili Garlic Sauce
2 Tbsp Tamarind Sauce
Cold Water as needed
Oil for deep frying
Sesame Seeds & one Green Onion
Crispy Egg Plant with Sweet & Sour Sauce
Method:
Wash and cut the egg plants in to bite size cubes.
Sprinkle Salt and let it rest for 30 minutes.
Mix egg, flour, black pepper and crushed red chili, gradually add cold water to make a batter of honey like consistency.
After 30 minutes, discard any water from egg plant cubes. Dip the cubes into batter and deep fry on medium high heat till nice golden brown. Take out on kitchen towel to drain any excess oil.
In a heavy base pan take 2 tbsp oil, add ginger garlic paste and fry till fragnent.
Add Vinegar and all sauces. Cook till thick.
Place the fried Egg Plants on serving dish.
Pour sauce. Sprinkle sesame seeds and thinly sliced green onion.
SERVE!!!
Notes
Use Fresh Egg Plant
Don't skip the resting of Egg plant after sprinkling salt as any water will result in soggy egg plants.
Pour sauce just before serving
Can be served with boiled rice or it tastes great on its own
