Ingredients :

  • 2 Big Fresh Potatoes

  • 1 Big Ripe Tomato

  • 1/4 Cup Chopped Fresh Coriander

  • 1 Green Chili, Thinly sliced

  • 1 Cup Water

  • 1/4 Cup Oil

  • 1/2 Tsp Salt

  • 1/2 Tsp Crushed Red Chili

  • 1 Tbsp Whole White Cumin

Aaloo Bhujia

Method:

Slice Potatoes into 1/4 inch thick rounds.

Thinly Slice Tomatoes.

In a heavy base pan add oil, once warm add the cumin and let it get fragrant and a bit dark. Add the sliced Potatoes and fry till for about two minutes or until you see them slightly skinned.

Add Tomatoes, Salt & Crushed Red Chili. Mix & add Water.

Cover and let it cook until the water is dried and potatoes are tender.

Add Green Chilies and cook till oil sepeartes.

Garnish with Corriander.

SERVE!!!

Notes

  1. Do not slice the potatoes into very thin slices.

  2. Do not stir much while cooking, as it will break the potatoes.
