Banana Bread

Ingredients

  • 3-4 Ripe Bananas

  • 2 Eggs

  • 1 1/2 Cups Caster Sugar

  • 1 3/4 Cups Flour

  • 1/2 Cup Vegetable Oil

  • 1/4 Cup Milk

  • 1 Tsp Baking Soda

  • 1 Tsp Vanilla Essence

  • 1/2 Cup Wlanuts (Optional)

Method

Preheat Oven to 180C (356F). Line a 8 x 3 inch Loaf tin with butter paper/parchment paper/spray.

Mash Bananas till creamy, keep an eye on big chunks.

Add Eggs, Sugar, Oil, Milk & Vanilla. Whisk to Combine.

Add Sifted Flour & Baking Soda and mix using spatula.

Add Walnuts and mix. 

Pour in tin and bake for 60 minutes or until the bread pass Skewer test. 

let it rest for 15 minutes before putting on to wire rack. 

Cool Completely before cutting into slices.

  1. Use room temperature ingredients.

  2. Use Very Very ripe bananas, the riper the bananas the moist the bread.

  3. Do not use electric beater to mix, as it will over mix the batter making the bread dense and hard.

  4. If bread starts to get brown from top while its still not cooked from center, cover the tin with aluminum foil.

  5. Do not ever slice the hot bread, as it will break away easily.
