Black Berry Muffins

Ingredients

  • 2 Cups Flour

  • 1/2 Cup Caster Sugar plus 2 Tsp extra

  • 1 tbs Baking Powder

  • 1/2 Cup Milk

  • 1/2 Cup Oil

  • 1/4 Cup Yogurt

  • 1/4 Cup Heavy Cream

  • 1 Egg

  • 2 Cups Fresh/frozen Black Berries

Method

Preheat Oven to 200 C

Line a 12 muffin capacity tin with muffin/cup cake liner.

Wash and dry the Berries.

Coat Berries with two table spoons of Flour. Set aside.

In a large bowl add Flour, Sugar & Baking powder. Mix to break any lumps.

Add Egg, Milk, Oil & Cream. Whisk to combine. 

Add Berries. Fold gently.

Pour one scoop or more, if your tin is big, of batter, into prepared tin. 

Sprinkle 2 tsp Sugar equally the batter.

Bake for 18-20 minutes or until done. 

Serve!!!

  1. Use fresh Berries for best taste.

  2. Serve the warm Muffins with Butter or Greek Yogurt.

  3. Use room temperature ingredients.

  4. You can use all kind of berries in the muffins.

  5. The same recipe can be used to make 8*3 loaf /an 8" round cake / a 6" square cake.
