Bread Pudding

Ingredients

  • 3 Egg Yolks

  • 1 Egg

  • 250 ml Heavy Cream

  • 250 ml Milk

  • 1 Cup Caster Sugar

  • 4 Croissants (Preferably a day old)

  • 4 Tbsp of Butter

  • 1/4 Cup Raisins

  • 1/4 Cup White Chocolate Chips

Method

Preheat Oven to 180C (356F).

Whisk Egg Yolks, Egg & Caster Sugar till very pale.

Mix Milk, Cream and Sugar in a pan and simmer on medium flame till warm and not hot.

Slowly add the Milk mixture while whisking. 

Apply Butter on horizontally sliced Croissants and arrange in a heat proof serving dish. 

Add the Egg & Milk mixture. 

Sprinkle Raisins & White Chocolate. 

Bake for about 25 minutes or until the center is just set. 

Serve Hot with Caramel Sauce and Vanilla Ice Cream.  

Notes:

  1. Use of a day old croissants is highly recommended, I even use a bit dried out ones for better absorption of custard.

  2. Do not boil the milk mixture. Just warm it and add the warm mixture to beaten egg and sugar mix.

  3. The set pudding should be a bit juicy and not jelly like (Rubery)
