Ingredients

  • 1 Chicken, cut into Karahi cut

  • 2 Big Onions, Thinly Sliced

  • 2 Medium Tomatoes

  • 1 Tbsp Ginger Garlic Paste

  • 1 Tsp Salt

  • 1 Tsp Red Chili Powder

  • 1 Tsp Turmeric Powder

  • 1 Tsp Coriander Powder

  • 1 Tsp Whole Spice Mix Powder (Garam Masala)

  • 3 Tbsp Qorma Masla (Shan)

  • 1 Cup Home made Yogurt (Dahi)

  • 1/2 Cup Mustard Oil

  • 1 Cup Desi Ghee

  • 1/2 Cup Almonds (peeled)

  • 1/4 Cup Chopped fresh Coriander leaves

  • 2 - 3 Cups water

Method

Add Mustard oil in a heavy base pan. Add half of sliced onions and fry till nice golden brown. Take them out on kitchen towel to drain any excess oil. Make paste once at room temperature and set aside.

In the same oil fry Chicken on high flame till light brown.

Meanwhile, Make paste of tomatoes and onion. Once chicken is light brown add the tomato onion paste, add ginger garlic paste and all spices. Add water, Mix, Cover and cook till Chicken is cooked through.

Add Desi ghee and let it simmer on medium low flame.

Make paste of half of the almonds.

Add almond paste, fried onion paste and yogurt. Cook while stirring till oil separates out.

Add remining almonds and garnish with Coriander leaves.

SERVE!!!

Chicken Badami Qorma

Notes

  1. Take Fresh chicken.

  2. Fry the chicken on high heat to lock the juices, it will help your chicken to remain tender.

  3. Use Ghee to have rich qorma. 

  4. Use Qorma masala to have rich aroma and taste of that Shadi wala qorma.

  5. Do not skip Almonds paste and yogurt as only this will give qorma its grainy gravy.

  6. Do not reduce quantity of oil and ghee as qorma tastes best when high on fat content.
