Chocolate Cup Cakes
Ingredients
2/3 Cup Plain Flour, Sifted
1/4 Cup Cocoa Powder
1/2 Tsp Baking Powder
1/4 Tsp Baking Soda
1/8 Tsp Salt
1 Egg Plus 1 Egg Yolk
1/4 Cup Caster Sugar
1/4 Cup Brown Sugar
1/3 Cup Plain Yogurt
Method
Preheat Oven to 180C (320F). Arrange a Cup Cake tray with 8 Liners.
Mix Flour, Cocoa Powder, Baking Powder, Baking Soda & Salt.
In a separate bowl beat together Egg, Yolk & Sugars till mixed and light.
Add half of the Yogurt and half of the wet ingredients to dry ingredients, fold. Add remining half of Yogurt and wet ingredients and fold till mixed.
Divide the Batter between the liners and bake for 15 - 20 minutes or until the Cup Cakes pass the skewer test.
Frost and Serve
Chocolate Frosting
1 Cup Butter
1/3 Cup Icing Sugar
1/4 Cup Cocoa Powder
Beat butter till light and fluffy.
Add Sugar & Cocoa Powder and beat on low speed to mix completely.
Keep in fridge for 30 mins before frosting the cake
Notes
Use Room Temperature Ingredients.
Fill the Cup Cakes Liners to 2/3 Capacity.
Frost the completely cooled Cup Cakes.
Cup Cakes can be frozen without frosting.
