Cinnamon Tea Cake
Ingredients
60 gm Butter
1 Tsp Vanilla Essence
2/3 Cup Caster Sugar
1 Egg
1 Cup Flour
2 Tsp Baking Powder
1/3 Cup Milk
1 Tsp Cinnamon powder
1 Tsp Icing Sugar
Method
Preheat Oven to 150C (300F). Line a 5 x 2 inch Loaf tin with butter paper/parchment paper/spray.
Beat Butter, Vanilla Essence and Sugar in a small bowl till very fluffy & Pale (about 2 Mins.).
Add Egg beat well.
Add Milk. Mix with Spatula.
Fold in sifted flour and baking powder.
Pour the batter in prepared tin
Bake for 30 mins or until the skewer/cake tester comes out clean.
Cool on wire rack.
Mix the Cinnamon and Sugar and Sprinkle on cool cake
Serve!!!
Use Room Temperature Ingredients.
Creaming of Butter and Sugar is an essential step to aerate the batter-Give it time.
Skipping the Sprinkling of Cinnamon & Sugar mix will result in the simple tea cake.
you can add 1/2 Tsp Cinnamon powder in the batter to enhance the flavor.
