Ingredients
1 Chicken cut into Karahi cut
1 Small Onion, thinly sliced (optional)
4 big Tomatoes ( Roughly chopped)
1 Tsp Salt
1 Tsp Red Chili powder
1 Tsp Black pepper powder
1 Tsp Turmeric powder
1 Tsp Coriander powder
1 Tsp Whole Spice powder (garam masala)
1 Tsp dried Fenugreek leaves (Qasoori Meethi )
1 Tbsp Ginger Garlic paste
1/2 Cup Clarified Butter ( Desi Ghee)
1 Cup Home made Yogurt, beaten to smooth
4-5 Green Chilies, thinly sliced
1 Cup Chopped Fresh Coriander leaves
1/2 Cup water
Method
Wash the Chicken thoroughly.
Put everything except, qasoori meethi, green chilies & fresh Coriander leaves in a heavy base wok(Karahi). Cover and cook on high flame for about 7 minute. Lower the flame to medium until chicken is cooked through and water is dried out.
Sprinkle dried Fenugreek leaves and green chilies, Cover and let it cook on low flame for about 10 minutes. Remove from heat when ghee is separated.
Sprinkle Chopped coriander leaves.
SERVE!!!

Notes
Take fresh fresh Chicken.
Do not skip any spice as it will effect the taste.
You can alter the spice level.
Initial 7 minutes high flame cooking is important to lock the juices of chicken. it will result in soft, tender & juicy karahi.
Do not stir the Chicken while on low flame.
You can replace Chicken with Beef or Mutton , adjust cooking time accordingly.
