Gajraila
Ingredients
2 Liters Milk
1/3 Cup Basmati Rice
2 Cups Water
1/2 Cup Grated Carotts
1 Pkt Heavy Cream
2/3 Cup Sugar
1/2 Cup Khoya (Optional)
Alomnd & Pistachio (For Garnishing)
Method
In a heavy base pan cook pre-soaked rice and water on medium high flame till rice are soft and water is dried. Mash the rice.
Add Milk & Carrots. Cook on high flame till milk boils. Reduce flame to medium low and let it simmer till milk is reduced to half and slightly thick.
Add Heavy cream and stir to mix.
If adding khoya take out 1 Cup of Gajraila and mix khoya in it. Blend with hand blender till paste is formed. Add it back to pot. Keeping stirring until desired thickness is achieved.
Lastly add sugar and stir well.
Dish it out in serving bowl.
Garnish with Almonds & Pistachio.
SERVE CHILLED!!!
Notes:
Use Full cream milk for creamy thick Gajraila.
Use Good quality basmati rice and do not forget to soak the rice in cold water for at least 30 minutes.
Use fresh red thin carrots.
If using khoya, make sure its fresh.
