Gulab Jaman
Ingredients
1 Cup Dry Milk Powder
1 Tsp Baking Powder
1 Tbsp All Purpose Flour
1 Egg
1 Tbsp Oil
1 1/2 Cup Sugar
1 1/2 Cup Water
Seed of 1 Cardamom or 1/4 Tsp Cardamom Powder
Oil for Deep Frying
Silver Paper for garnish (Optional)
Almonds & Pistachios (Finely Chopped)
Method
In a heavy base pan, add Sugar, Water & Cardamom, Stir and let it Simmer on medium low flame.
In a wide bowl sift the Flour, Dry Milk Powder & Baking Powder.
Add Oil & Egg. Knead the dough using hand. In about 5 mins you will get a very soft dough.
Oil your hands & make small balls from dough. You will get 10-12 Gulab Jamans.
Heat the Oil in deep wok, wait till its hot, fry the balls on medium low heat till you get nice golden maroon color and the gulab jamans are cooked through.
Immerse the fried Gulab Jamans in the simmering Water Sugar mixture. Put Off the Flame.
Let the Jamans sit in Sugar mixture for atleast 30 minutes before serving.
Ganish with Silver Paper and finely chopped almonds and Pistachios.
Serve!!!
Notes
Use Room Temperature Ingredients.
Skipping the Lemon curd will give you just plain vanilla cake.
If you do not get Lemon Curd, add 1 tsp of lemon zest to Sugar, before creaming Sugar & Butter. Just rub in zest to Sugar. Though you will get the Lemon Loaf Cake but will miss the lemon-buttery aroma of curd.
Creaming of Butter and Sugar is an essential step to aerate the batter-Give it time. Approximate 3-5 minutes of beating is recommended.
