EASY EVERY DAY TRIED & TESTED RECIPES FOR EVERYONE AROUND ME

Ingredients:

  • 1 Chicken (Karahi Cut)

  • 1 Tsp Salt

  • 1/4 Tsp Black Pepper

  • 1/2 Tsp Red Chili powder

  • 1/2 Tsp Turmeric Powder

  • 1/2 Tsp Coriander Powder

  • 1/2 Cup Yogurt

  • 1 Medium Sized Onion(Thinly Sliced)

  • 5 gloves Garlic

  • 3 Big Tomatoes ( Diced)

  • 2 Green Chilies (Thinly Sliced)

  • 1 Tbsp Ginger Paste

  • 1/2 inch piece of Ginger(Thinly Sliced)

  • 1/2 Cup Cooking Oil

  • 2 Tbsp Desi Ghee (Clarified Butter)

  • 1/2 Litre Water

  • Fresh Coriander leaves (For Garnishing)

Home Style Karahi

Method:

In a pot, preferably karahi heat oil. Add Chicken & fry till nice light brown. Take it out.

In the same oil add onion and fry till golden brown.

Add Tomatoes, Garlic Gloves, Ginger paste and all spices. Cover and cook till tomatoes are tender. Mash the tomatoes.

Add Yogurt and cook till oil separates. Add fried Chicken and water. Cover & cook till chicken is tender and water is dried.

Add Green chilies and sliced ginger. Lastly add Desi Ghee and cook for further 2 minutes.

Garnish with coriander leaves.

SERVE WITH NAAN/CHAPATI/PARATHA !!!

Notes

  1. To speed up the cooking you can dip chicken in brine (1/2 L water plus 2 Tbsp of salt) for 30 minutes. If doing so reduce quantity of salt in the karahi.

  2. Use home made yogurt. A day old will be best.

  3. Slice the onions as thin as possible as it will result in better caramelization of onion.

  4. Always add diced tomatoes in karahi as it gives karahi that bright reddish orange color.  

  5. Do not pressure cook as it will not let the Chicken absorb flavors.
