EASY EVERY DAY TRIED & TESTED RECIPES FOR EVERYONE AROUND ME
Ingredients:
Breast of One Chicken (cut into halves and sliced lenghtwise)
1/2 Tsp Black Pepper
1/2 tsp Salt
6 Cloves Garlic
2 -3 Tbsp Butter
2 Tbsp Mixed Herbs
Freshly Chopped coriander leaves
1 Cup Chicken stock
Juice of two lemons
6 - 8 Tbsp Parmesan Cheese
1 Cup Flour
2 egss
6 Tbsp Oil
1 Tbsp Cornflour
Chicken in Lemon Butter Sauce
Method:
Crush Garlic and mix half of it with salt & Black Pepper.
Add mixed herbs & eggs. Set aside.
Mix Flour and Parmesan Cheese. Set aside.
Heat oil in a heavy base pan.
Coat Chicken with egg mix and then flour mix. Shake off excess and fry till golden brown on both sides & cooked through.
While Chicken is frying. Melt butter in a sauce pan, add left over garlic and fry till fragrant. Add Chicken Stock & Lemon juice. Add a pinch of black pepper and mix.
Make slurry of corn flour and add to sauce. Cook for a minute. Remove from heat.
Place fried chicken in a dish and pour hot sauce over it.
Garnish with Coriander leaves.
SERVE!!!
Notes
Take Fresh Fillets. Though you can use frozen ones but the fresh ones are always more juicy.
You can alter the quantity of Lemon and spices as per your taste.
Its is recommended to use freshly grated parmesan cheese for that special flavor of cheese.
Serve with white Rice for full meal serving.
